Chocolate Ice Cream Sandwiches
1/3 cup butter, softened
1/3 cup sugar
1/3 cup brown sugar
1 egg
1/2 teaspoon vanilla
3/4 cup plus 2 tablesspoons flour
1/4 cup cocoa
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup semisweet chocolate chips
1 pint vanilla ice cream
In a mixing bowl, cream butter and sugars. Beat in egg and vanilla. Combine the flour, cocoa, baking powder, baking soda and salt; add to creamed mixture and mix well.
Drop by rounded tablespoons 2 in. apart on a greased cookie sheets, forming 16 cookies. Flatten slightly with a glass. Sprinkle with chocolate chips. Bake at 375 degrees for seven minutes then remove from oven and let sit for 1 minute before removing to the cooling rack.
To assemble sandwiches, place 1/4 cup ice cream on the bottom of half the cookies. Wrap each in plastic wrap and freeze overnight.
