Potato Bread
2 medium potatoes, boiled
1 package yeast
1 heaping tsp sugar
1/2 cup hot water
1 1/2 cups hot water
2 teaspoons salt
6-7 cups flour
Proof yeast: Combine yeast, sugar, 1/2 cup water. Mix, put aside for 5 minutes, will foam. Add in 1 1/2 cups potato juice, potatoes, and salt. Mix all together.
Start adding flour-start with 4 cups. Mix; when doesn't mix with spoon turn on floured counter. Add flour accordingly. Keep kneading until elastic. (About 10 minutes.)
Place in oiled bowl. Turn to grease top and let rise until doubled in bulk. Then punch down and knead 2-3 times. Return to bowl. Let rise again (about 1 hour). Split and shape into loaves. Put in greased loaf pan. Let rise again (1\2 hour). Bake at 350 degrees for 35 minutes.
