8 cups cubed peeled potatoes 1/4 cup butter 2 tablespoons flour 3/4 teaspoon salt 1/8 teaspoon pepper 1 1/2 cups milk 1 pound processed American cheese, cubed In a large saucepan, cook potatoes in boiling water until done. Drain and place in well greased 2 1/2 qt. baking dish. In a saucepan, melt butter, Add the flour, salt and pepper; stir to form a smooth paste. Gradually add milk, stirring constantly. Bring to a boil; boil and stir for one minutes. Add cheese; stir until just melted. Pour over potatoes. Cover and bake at 350 degrees for 45-50 minutes or until bubbly. |
