Rhubarb Crisp

1 cup flour
1 teaspoon cinnamon
3/4 cup quick-cooking oats
1 cup brown sugar
1/2 cup butter
4 cups rhubarb, diced
2 tablespoons cornstarch
1 cup sugar
1 cup water
1 teaspoon vanilla

Crumb and mix together flour, cinnamon, quick oatmeal, brown sugar, and butter. Press half of mixture in bottom of 9 inch pan and set the other half aside. In sauce pan combine sugar, cornstarch, water, and vanilla, Cook until clear. Pour over rhubarb. Pour over crumb mixture in pan and cover with crumb mixture. Bake at 350 degrees for 1 hour.
