Easy Carmel Corn


1/2 cup popcorn, air-popped, 3 quarts
1 cup brown sugar, packed
1/2 cup light corn syrup
1/2 cup butter
1/2 teaspoon vanilla
1/2 teaspoon baking soda

Place popped popcorn in large shallow roasting pan and place in 250 degree oven while preparing glaze. In 2 quart saucepan combine brown sugar, butter and corn syrup. Stirring constantly, bring to boil over medium heat. Without stirring boil 4 minutes. Remove from heat; stir in vanilla and baking soda. Pour over warm popcorn; stir to coat well. Bake in 250 degrees oven for 1 hour. Stirring occassionally. Cool; break apart. Store in airtight container. Makes 3 quarts.
