Southwest Chicken & Rice
4 boneless skinless chicken breast halves
1 cup think and chunky salsa
1 pkg taco seasoning mix
2 cups water
2 cups Minute Rice, uncooked
1 can black beans
1 cup shredded cheddar or Mexican cheese
sour cream for garnish
Brown chicken in large frying pan. Add salsa, taco seasoning, and water. Bring to boil. Cover and reduce heat. Simmer for 10 minutes. Return to boil. Stir in rice and beans. Sprinkle with cheese. Cover and cook on low heat for 5 minutes. Serve with sour cream.
