Cocoa Fudge


2/3 cup cocoa
3 Cups Sugar
1 1/2 cup milk
1/8 tsp salt
4 1/2 tsp butter
1 tsp vanilla

Combine cocoa, sugar, and salt.

Add milk. bring to a bolil stirring frequently.

Cook to 234 degrees.

Remove from heat and add butter, cool to 110 degrees. Ad vanilla and nuts if desired and beat.


Note: OK, this recipe is very tricky. It was my FIL's. He said that people who have moved away from the altitude have trouble with it when they never did before. It is very persnickety and really hard to put on paper and not show the person making it a few tricks. The ones that I can put on paper is only cook to about 229 or 230. After you take it off the heat is still cooks. If you cook it all the way to 234 it doesn't work. Also, only cool to about 114-115. Can't explain why on that one but trust me. It is hard to stir. I have to have my DH aroun to help me with stirring it.
