Whole Wheat Loaves


2 packages yeast, 2 1/4 tsp each
1 1/2 cups lukewarm water
4 tbsp honey
1 1/2 cup milk
1 tbsp salt
1/4 cup butter
2 eggs, beaten
4 cups whole wheat flour
3 cups white bread flour

Dissolve yeast in warm water; add 1 tablespoon honey and let set until foamy, 5-10 minutes. Scald milk and remove from heat; stir in remainder of honey, salt and butter, cool to lukewarm. Add yeast mixture and beaten eggs to milk. Stir in 3 cups whole wheat flour and beat batter until smooth. Add the remaining whole wheat flour and white flour to make a stiff dough. On a lightly floured surface, knead until smooth and elastic, about ten minutes. Place in well greased bowl, turn dough to coat surface. Cover and let rise. Punch down dough and turn out on a lightly floured surface. Divide into 2 portions, cover braid, then do the other half. Carefully lift into a well greased 9x5x3 inch pan. Let rise. Bake at 350 degrees for 45 minutes. cool on reacks.
