Betty's Apple Cake
1 3/4 cups sugar
1 cup vegetable oil
2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
4 medium tart apples, peeled and sliced
In a large mixing bowl, beat the sugar oil and eggs. Combine the flour, baking soda, cinnamon and salt. Add the sugar mixture; mix well. (Batter will be thick.) Fold in the apples.
Spread into a greased 13 x 9 x 2 inch baking dish. Bake at 350 degrees for 55-60 minutes or until toothpick inserted neat the center comes out clean. Cool on a wire rack. Sprinkle with confectioner's sugar.
