1 large can crushed pineapple, drained
1 cup Acini De Pepe, cooked until tender
1 3/4 cups pineapple juice
3 egg yolks
1 cup sugar
2 tablespoons flour
1/2 teaspoon salt
2 cans mandarin oranges
1/2 jar maraschino cherries
1/2 bag miniature marshmallows
1 large Cool Whip®
Cook the Acini De Pepe until tender, drain and rinse with cold water and let set in cold water until cool. Drain Acini De Pepe and pour over pudding mix, made by cooking until thick the egg yolks, sugar, pineapple juice, flour and salt. Let sit over night in the refrigerator. Add Mandarin oranges and cherries, the marshmallow and pineapple. Stir in Cool Whip.
Note: Instead of the cherries I put in about a half a cup of coconut.
