Peach Cobbler Bread


1/3 cup oil
1 cup sugar
2 eggs
1 cup diced peaches (the recipe called for fresh, I used canned)
1/3 cup peach juice from canned peaches or water
1 tsp. vanilla
1/2 tsp. almond extract
1 2/3 cup flour
1 tsp. baking soda
1/4 tsp. baking powder
1/2 tsp salt

TOPPING:
2 T. flour
2 T. brown sugar
1/4 cup sliced almonds

Cream oil, sugar, add eggs and extracts. Add Peaches/juice. Mix wet with dry ingredients, don't overmix. Pour into a greased glass loaf pan. Combine topping ingredients and sprinkle over the top. Bake 350 for an hour. Cool then cut. YUM!

Variations: add different nuts; add chocolate chips; add dried fruit; add other fruit instead of peaches like pears or pineapple or apples for a different flavored bread.
