Cold Oven Pound Cake


Pam for Baking (or butter and flour)
1 ½ cups all purpose flour
½ teaspoon baking powder
½ teaspoon salt
½ cup butter, softened
1 ½ cups granulated sugar
1 teaspoon vanilla extract
2 eggs plus 1 egg yolk, room temperature
1/2 cup whipping cream

Spray a 9x5 inch loaf pan with Pam for Baking. Sift flour twice. Stir in baking powder and salt and set flour mixture aside.

In bowl of a standing mixer, beat butter and sugar until creamy and light. Beat in vanilla. Beat in eggs, one egg at a time, beating for 30 seconds after each egg. Beat in yolk.

Using a mixing spoon, stir in half of flour mixture. Stir in cream, followed by remaining flour mixture. Stir (do not beat) until fully blended. Scrape into prepared pan.

Place on center rack in oven and set oven to 325 degrees F. Bake for 55-60 minutes or until skewer poked in center comes out clean. Let cool in pan for about 15 minutes. Turn from pan and cool completely.
